The sunset lounge is a picturesque dining/bar area looking out to a gorgeous infinity pool and a rocky beach. The menu is mostly made up of smaller, tapas like dishes. At the beginning, my mom ordered a pineapple martini, which was unfortunately very watery and had no pineapple flavor- so we had to send that back. Not the best start. Soon, two rolls arrived- we ordered the Bull dog roll and the Samurai roll. The Bull dog was a crab roll wrapped in seaweed and a thin slice of sautéed beef. Both of the proteins were very tender, and there was a nice touch of chipotle aioli. The Samurai roll was a mix of tuna and salmon, which was perfectly seasoned with a citrus touch. Next, we had the sticky fiery wings--while the spicy flavors of the wings were delicious, I would've liked the skin to be crispier. Then, we ate the Chicken Yaki Udon- I found the whole dish just to be way too greasy, and the over-saltiness of the noodles prevented me from tasting the rest of the ingredients in the dish. Finally, we had the Beef and Rice dish, which was just disappointing. The beef was too chewy, the rice too mushy, and overall the dish was too sweet because of the Char Siu black sauce, which they put way too much on. At the end, the Viceroy undoubtedly had the best atmosphere in Anguilla- and definitely the most crowded too. The environment was modern and pretty stunning, and I would definitely come back just to sit down and relax. However, besides the rolls, the hot dishes were underwhelming, and didn't quite reflect on the greatness of the Viceroy. 3 pineapples. Till next time!
